Sambar Recipe


  • Tur dal - 1/3 cup
  • Mixed Vegetables - 1 cup
  • Onion -1 finely chopped
  • Tamarind - small lemon sized ball
  • Sambar powder - 2 tsp
  • Turmeric powder - 1/4 tsp
  • Asafoetida – 1 tsp
  • Coriander Leaves
  • Salt to taste
  • Mustard seeds -1 tsp
  • Asafoetida - a generous pinch
  • Fenugreek seeds - 1/2 tsp
  • Red Chilli – 1
  • Curry leaves – few
  • Garlic – 6-7 pods

Sambar is a very popular dish in South Indian cuisine. It is served with steamed rice or as a side dish for idli and dosa.

You can use any vegetables like beans, carrot, cauliflower, potato, brinjal. But do not add too many vegetables, otherwise you will end up having more vegetables and very less liquid in sambar.


Procedure : Sambar Recipe

  • Pressure cook Tuar dal with 2 cups of water, 2 pinches of turmeric, 2 pinches of asafoetida.
  • Mash the dal smoothly. Set aside.
  • Wash the vegetables well and boil it along with the dal.
  • Once vegetables are half cooked, add the tamarind extract and salt and bring to a boil. Reduce heat and let it simmer for 12-14 minutes, till the rawness of the tamarind disappears.
  • Heat oil a separate pan.
  • Add the mustard seeds and let them splutter.
  • Add hing and red chillies and roast for a few seconds. Don’t burn them.
  • Mash the garlic pods roughly and add them.
  • Lastly add curry leaves and sambar powder.
  • Pour the tempering over boiled Dal with Vegetables.
  • Let it boil for 2-3 minutes.
  • Garnish with coriander leaves and a dollop of salted butter on top.

Serve hot with steamed rice, Idli.


You can make Sambar Powder at home also. How to prepare Sambar Powder:


  1. Channa dal – 1 tbsp heaped
  2. Coriander seeds – 3/4th tsp
  3. Red chillies – 4
  4. Fenugreek seeds – ½ tsp
  5. Cumin seeds – ½ tsp


  • Roast the above ingredients. You can roast everything together. But except jeera/ cumin seeds, which has to be added towards the end. Take care not to burn anything. So roast in medium flame with constant roasting. If anything gets burnt, the total dish will not turn out well!
  • Cool down and powder into a coarse powder. In between powdering, you might need to wipe the sides, lid of the mixer for even powdering. Set aside.
